Ingredients: 2 1/2 pounds of wings trimmed and separated, 6 tablespoons olive oil, juice of 2 medium lemons, 2 large garlic cloves chopped, 1 small onion minced, 4 tablespoons minced parsley, 1 tablespoon coriander seeds crushed finely, 3 teaspoons sambal oelek or Tabasco sauce, 2 teaspoons ground cumin

  • Mix marinade ingredients in a bowl large enough to hold wings. Add wings, stir, and marinate for 2 hours at room temperature. Drain and reserve marinade.
  • Preheat broiler. Place wings on broiling rack and broil 15 to 20 minutes or until browned and cooked through. Turn after 10 minutes and baste with marinade.
  • Transfer to a platter and serve.
